I posted this picture this AM on social media and had several requests for the recipe. Here it is!
I got this recipe from https://www.teambeachbody.com/teambeachbodyblog/uncategorized/slow-cooker-beef-chili. But… I have tweaked it in true FunctionFitMom style! The original directions were too much work, not enough servings, and for me too spicy. (So please tweak the chili powder to your taste!)
It has been SOOOO crazy hot here in Florida this year. But Joe loves his outside time! We make it work with lots of sunscreen, playing in the sprinkler, and cold treats! The popsicles at the store seem to be so high in added sugar and fake ingredients. I’ve been trying my hand at making my own popsicles! These pops were yummy with Greek yogurt. I’m going to try them soon with regular non-fat yogurt and I’ll keep you posted! Hey they are toddler approved!
K10’s Crockpot Turkey Breast, really that’s the best you’ve got. Yup. sorry people. I majored in math, not creative writing! And it is Crockpot right? or is it Crock Pot. or is it Crock-pot? And is it “C” or “c?” Who ever 1. signs up for emails from functionalfitmom.com and 2. leaves a comment on this post first and tells me the right answer gets a free sample of Shakeology. So… I’ve been wanting to make a turkey in the crockpot for a while. I’ve been scrolling through a bazillion recipes on Pinterest. And the regular Internet.
Well, this is what I came up with. My goals were 1. Clean ingredients 2. Yummy 3. Don’t dry it out.
Here’s what I came up with:
Pretty sweet huh?! I mean it’s not sweet, but it’s sweet. Know what I’m sayin? It was delicious. And easy!
The turkey breast I had was almost 7 pounds so I had to use my big-momma 8 Qt Crockpot. I also discovered I need to take turkey carving lessons. That’s why there’s no pretty plate picture. But the bird looked pretty tasty on the cutting board. I served it up with steamed asparagus and a baked sweet potato – super healthy and super yummo!
Now, I got a big container of broth, any ideas what I could do with that? Maybe a soup? I’m not really into gravy so, any ideas?

What does that have to do with meat sauce? Nothin. 🙂
So I am working on an Italian style meat sauce that i can make in the crock pot and use on/in anything: zoodles, lasagna, etc.
I used these ingredients (not the bananas or kids snacks in the background):
I used the ground veal, but this would work with lean ground beef or turkey as well. I served it over zoodles. And because I’m new at this blogging thing, I completely forgot to take a picture of my plate. Oops, My bad really. I’m sorry. I have a couple excuses if you want to know why. But you’ll have to ask. And I’ll update the recipe with a picture when I heat up the leftovers tomorrow. See I’m still here for you!
My only concern about how it turned out is that in the crock pot it doesn’t reduce like on the stove. So this may get tweaked as I continue to learn. And if you have any ideas, please feel free to comment!
I realized at lunchtime today that I had nothing planned for dinner….nothing…

I’ve read several recipes for salsa chicken where you add a bunch of extra ingredients, you know, other than chicken and salsa. But due to either laziness, forgetfulness, or running out of stuff I have realized you really don’t need anything other than the salsa. Yes. I’m serious.
But how do you keep it clean you ask? Well, don’t buy the jar stuff. I love it. You love it. No Superbowl is complete without it. But don’t eat it. Ok? OK.
You can make your own, which I don’t do often. Or you can buy fresh salsa or pico de gallo in your grocery’s deli. Yes! See:
It’s not PERFECT, but it’s close enough for government work. It does have a little citric acid. It also has a little added sugar, but I don’t think its very much. And it is at least real sugar.
Now. Here’s what you do: Put about 2 pounds of boneless skinless chicken breasts and/or thighs in your Crock pot. Dump whole container of salsa in Crock Pot. Turn on Crock pot. Voila! Yeah, it’s delicious as tacos, on a salad, on its own. yum yum. Keep salsa around for days like this! And maybe you already made this, but I just discovered this concept within the last year. Thank goodness!
To make it look prettier, I just carefully pick the chick up with tongs to keep some of the salsa on there. Tonight we had these as tacos. I made the tortillas in the picture myself. This recipe is from Juli Bauer’s Paleo Cookbook. They are grain-free and super delicious.
